Linda's IB Kitchen:Wonderfully Cooling and Flavorful Very Simple Salad for a hot Summer day or anytime of the year!


Ingredients:

1 - 14 1/2 oz can of mixed vegetables or "VegAll", or 1 large 28 oz can (for a bigger salad)
1 bottle of cold Creamy Italian, or Ranch salad dressing (depending on your taste or any kind     you like Thousand Island works well)
several lettuce leaves or or bunch of spinach leaves even both if you like
salt and pepper to taste

Optional:  
sunflower seeds or other crunchy topping mix
                  bacon bits
                  sprouts
                  crunchy corn chips crushed or tortilla chips crushed

Preparation:

1.  Drain can of vegetables and rinse
2.  mix vegetables with salad dressing of your choice to coat thoroughly
3.  lay a bed of lettuce leaves or bunch of spinach leaves or both on each individual plate and     top with a generous scoop of vegetable and dressing mixture
4.  add additional ingredients you like

WooHoo!  What marvelous flavor and textures in this ridiculously easy salad!  This pairs well with any meal and adds a cooling addition.  Even the kids will enjoy their veggies!  Remember to cook with love and use locally grown items and fresh is always best!  Linda
