Linda's IB Kitchen: Fabulously Easy and Delicious Banana Bread! It makes 2 large loaves or cut the recipe in half for one fantastic loaf of Heaven!Ingredients:
4 Cups all purpose flour (or 2 C for one loaf)
2 Cups sugar (1 C for one loaf)
2 tsp salt (1 t for one loaf)
1 Cup soft butter or 2 sticks (1/2 C or 1 stick for one loaf)
6 ripe bananas mashed (4 mashed for one loaf)
4 tsp baking powder (2 t for one loaf)
2 tsp baking soda (1 t for one loaf)
4 eggs room temperature (2 for one loaf)
1 or 2 greased loaf pans
Optional: 1/2 - 1 Cup chocolate chips or peanut butter chips
1/2 - 1 Cup shredded coconut
1/2 8 oz cube of cream cheese cubed
1/ - 1 Cup pecans, walnuts, macadamia nuts, cashews or any other nut you like!
1. Pre-heat oven to 350 degrees
2. mix dry ingredients
3. mix and cream butte, eggs and bananas
4. mix wet and dry ingredients slowly together with a mixer or by hand
5. after blending all well add optional ingredients as you like
6. pour into 1 or 2 greased loaf pans
7. bake 40-45 minutes until top springs back and toothpick come out clean
Note: if baking one loaf check on progress after 35 minutes so you don't over bake!
Remove your loaf or loaves from the oven and savor the smell! Remove the loaves from the pan and let rest if possible before cutting, of course be prepared to have demands to "please cut me a slice or plank now!" This loaf will become a family favorite and is easy enough to bake often! Again you will receive many compliments and requests for seconds! Remember to always cook with love and use locally grown ingredients and fresh is always best! Linda
